The yolk is
on you, as children love to say. Or, in this case, on the Bureau of Statistics.
The proportion of egg on face of the Bureau is 33% yolk and 67% egg white,
though these figures need adjusting if we factor in eggshell: say 5%? Yolk is an indeterminate colour
ranging from orange to lemon, making it nature’s way of charting the spectrum
of a primary. A breakdown of those figures into averages is not currently
available. August 9 was Census Night, proof technology is not all it’s cracked
up to be and yolks fly thick and fast.
